cream of chicken soup
  • 1 can (10.5 oz) cream of chicken soup
diced tomatoes with green chiles

chicken broth
  • 1 cup chicken broth
yellow onion
  • 1 small yellow onion, diced
kosher salt
  • 0.75 tsp kosher salt
black pepper
  • 0.25 tsp black pepper
cream cheese
  • 8 oz cream cheese, cubed
shredded cheddar cheese
  • 2 cup shredded cheddar cheese
spaghetti
  • 12 oz spaghetti, cooked
fresh parsley
  • 2 tbsp fresh parsley, chopped, for serving

Method
 

Load the crockpot
  1. Place the boneless, skinless chicken breasts, cream of chicken soup, diced tomatoes with green chiles, chicken broth, small yellow onion, kosher salt, and black pepper into the crockpot. Stir gently so the seasonings are distributed, then keep the ingredients in an even layer.
  2. Cover and cook on low for 6–7 hours, until the chicken is tender and shreds easily. You should see steady bubbling through the lid without boiling over.
Make the creamy cheese sauce
  1. Remove the chicken, shred it, and return it to the crockpot. Stir until the shredded chicken is mixed back into the sauce.
  2. Add the cubed cream cheese and stir until melted and smooth. Let it blend into the sauce until no visible cream cheese chunks remain.
  3. Stir in half the shredded cheddar cheese until melted into the sauce. The sauce should turn glossy and thick with a uniform cheesy color.
Finish with pasta
  1. Add the cooked spaghetti and toss to coat evenly in the sauce. Stir until every strand looks lightly covered.
  2. Top with the remaining shredded cheddar cheese and fresh parsley before serving. The final layer should look scattered and fresh.

Notes

Pro tip: For best texture, shred the chicken thoroughly so it distributes through the sauce instead of clumping. Store leftovers in the refrigerator up to 3 days; reheat gently on the stovetop or microwave until warmed through, adding a splash of broth if the sauce thickens. Freezing is not recommended because pasta can soften too much after thawing. For a lower-fat swap, use reduced-fat cream cheese and reduced-fat cheddar (the sauce will be slightly less rich but still creamy).
