Ingredients

For the peanut butter filling
  • 1 cup peanut butter creamy, not natural-style
  • 0.5 cup unsalted butter softened
  • 3 cups confectioners' sugar
For the chocolate coating
  • 12 oz semisweet chocolate chips

Equipment

  • 1 baking sheet

Method

Make the filling
  1. Line a baking sheet with parchment paper.
  2. Beat the peanut butter and softened butter in a large bowl until smooth.
  3. Beat in the confectioners' sugar in three additions, mixing until a firm dough forms.
  4. Roll the dough into 36 balls, about 1 inch each, and arrange them on the baking sheet.
  5. Refrigerate for 30 minutes, until firm.
Dip and set the balls
  1. Put the chocolate chips in a microwave-safe bowl.
  2. Microwave at 50% power in 30-second intervals, stirring after each, until smooth.
  3. Dip each chilled ball in the melted chocolate, letting excess chocolate drip back into the bowl.
  4. Return each ball to the lined baking sheet.
  5. Refrigerate the balls for 20 to 30 minutes, until the chocolate is set.

Notes

For neat dipping, make sure the peanut butter balls are firm before coating and let excess chocolate drip off. Store in an airtight container in the refrigerator for up to 2 weeks; freezer-friendly for up to 2 months. For a dairy-free version, use dairy-free butter and semisweet chocolate chips.
