Method
- In a 5-quart Dutch oven over medium heat, cook the bacon, stirring occasionally, for 12 to 15 minutes until crisp; work in batches if needed.
- Transfer the bacon to a paper towel-lined plate and leave 2 tablespoons of fat in the pot.
- Add the onion and apples and cook over medium-low heat for 8 to 10 minutes, stirring often, until softened.
- Add the whiskey and scrape up the browned bits from the bottom of the pot.
- Simmer for 2 minutes.
- Stir in the brown sugar, vinegar, Dijon mustard, black pepper, and cooked bacon.
- Simmer uncovered over low heat for 35 to 45 minutes, stirring often, until thick and jammy.
- Let the jam cool for 15 minutes before serving.
- Alternatively, transfer it to an airtight container and refrigerate within 2 hours; use within 4 days.
Notes
For the thickest texture, stir often during the final simmer and cook until the jam is thick and jammy. Refrigerate in an airtight container and use within 4 days; freezer friendly, yes. For an alcohol-free variation, replace the whiskey with apple juice.
