Ingredients

For the goat cheese
  • 1 tsp olive oil
  • 1 log (8 oz) goat cheese
For the blueberry balsamic topping
  • 1 cup blueberries fresh
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp thyme leaves fresh
For serving
  • 1 box (8 oz) crackers

Equipment

  • 1 1-quart shallow baking dish

Method

Bake the goat cheese
  1. Heat the oven to 375°F.
  2. Grease a 1-quart shallow baking dish with the olive oil.
  3. Place the goat cheese in the dish.
  4. Bake for 10 to 12 minutes, until warmed through and softened but still holding its shape.
Make the topping
  1. While the cheese bakes, combine the blueberries, honey, balsamic vinegar, and thyme in a small saucepan over medium heat.
  2. Simmer for 6 to 8 minutes, stirring occasionally, until some berries burst and the sauce thickens slightly.
Serve
  1. Spoon the warm blueberry topping over the goat cheese.
  2. Let it rest for 5 minutes.
  3. Serve with the crackers.

Notes

For the best texture, serve the topping warm over the softened cheese. Refrigerate leftovers for up to 3 days; freezing is not recommended. Use gluten-free crackers if needed.
