Method
Prepare the crust
- Heat the oven to 325°F.
- Line a standard 12-cup muffin pan with paper liners.
- Stir the graham cracker crumbs, sugar, and melted butter together.
- Divide the mixture among the liners and press firmly into the bottoms.
- Bake for 5 minutes, then set the pan aside to cool while you make the filling.
Make the filling
- Beat the cream cheese, sugar, and flour in a large bowl on medium speed until smooth, scraping down the sides of the bowl as needed.
- Beat in the eggs one at a time on low speed.
- Mix in the sour cream, Baileys, and vanilla just until combined.
- Divide the filling evenly among the crusts.
- Bake at 325°F for 18 to 22 minutes, until the edges look set and the centers still have a slight jiggle.
- Turn off the oven, crack the door open, and leave the cheesecakes inside for 10 minutes.
- Transfer the pan to a wire rack to cool completely.
- Refrigerate the cheesecakes in the pan for at least 4 hours before serving.
Notes
For the smoothest filling, bring the eggs to room temperature and avoid overmixing after adding them. Store covered in the refrigerator for up to 4 days; freeze for up to 2 months and thaw overnight in the refrigerator. For an alcohol-free variation, replace the Baileys with Irish cream-flavored coffee creamer.
