Method
Marinate
- Combine browning sauce, all-purpose seasoning, garlic powder, onion powder, dried thyme, salt, and black pepper, then rub the mixture all over the chicken thighs and drumsticks and refrigerate.
- Marinate for at least 2 hours or overnight so the flavors penetrate the meat.
Caramelize and brown
- Heat the vegetable oil in a large skillet or Dutch oven over medium heat, then add the sugar and cook until it turns golden brown.
- Brown the marinated chicken pieces in the caramel oil until deeply golden on all sides, then remove to a plate.
Build the stew
- Sauté the onion, bell peppers, garlic, green onions, and scotch bonnet (if using) for 4 minutes until fragrant and slightly softened.
- Return the chicken to the pot, add the chicken broth, and bring everything to a boil.
- Reduce heat to low, cover, and simmer 35-40 minutes until the chicken is fall-apart tender and the gravy is thick.
Serve
- Serve the brown stew chicken with rice and garnish with fresh thyme.
Notes
Pro tip: For the deepest mahogany color, caramelize the sugar until golden (not dark brown) before browning the chicken. Refrigerate leftovers in a covered container for up to 4 days; reheat gently until hot. Freezing is yes—freeze cooked stew (without garnishing thyme) for up to 3 months and thaw overnight in the fridge. For a lower-sodium option, use reduced-sodium chicken broth and adjust added salt in the marinade.
