Ingredients

  • 3 tbsp unsalted butter
  • 0.33 cup light brown sugar packed
  • 0.25 cup unsweetened cocoa powder
  • 0.25 tsp ground cinnamon
  • 0.13 tsp ground nutmeg
  • 0.13 tsp kosher salt
  • 0.5 cup water
  • 4 cup whole milk
  • 0.5 cup dark rum
  • 1 tsp vanilla extract

Equipment

  • 1 3-quart saucepan

Method

  1. Melt the butter in a 3-quart saucepan over medium-low heat.
  2. Whisk in the brown sugar, cocoa powder, cinnamon, nutmeg, salt, and water until smooth.
  3. Gradually whisk in the milk.
  4. Heat over medium, stirring often, for 5–7 minutes, until steaming with small bubbles at the edges; do not let it boil.
  5. Remove the saucepan from the heat and stir in the dark rum and vanilla extract.
  6. Divide among 4 mugs and serve hot.

Notes

For the smoothest drink, keep it below a boil as it heats. Refrigerate leftovers for up to 3 days and reheat gently; freezing is not recommended. For a dairy-free swap, use unsweetened oat milk and vegan butter.
