Prep and assemble
- Preheat the oven to 375°F and grease a 9x13-inch baking dish.
- In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, diced tomatoes with green chiles, ground cumin, and kosher salt.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the shredded Mexican blend cheese evenly over the top.
- Cover the casserole with the crushed Nacho Cheese Doritos just before baking.
Bake and finish
- Bake at 375°F for 25–30 minutes, until bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
For best crunch, add the crushed Doritos right before baking (so they stay crisp on top). Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended because the Doritos topping and dairy can lose texture. For a lighter option, use reduced-fat sour cream and reduced-fat Mexican blend cheese.
