Ingredients

For the cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 2 eggs large
  • 1 cup buttermilk
  • 0.5 cup neutral oil
  • 2 tsp vanilla extract
For the cream cheese frosting
  • 1 package (8 oz) cream cheese softened
  • 0.5 cup unsalted butter softened
  • 3 cups powdered sugar
For the toffee crunch topping
  • 0.5 cup pecans chopped
  • 1 bag (8 oz) toffee bits
  • 2 tbsp red and green holiday sprinkles

Equipment

  • 1 9x13-inch baking pan
  • 1 electric mixer

Method

Make the cake
  1. Heat the oven to 350°F.
  2. Grease a 9x13-inch baking pan.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. In a separate bowl, whisk the eggs, buttermilk, neutral oil, and vanilla extract until combined.
  5. Stir the wet mixture into the flour mixture just until no dry streaks remain.
  6. Spread the batter in the pan and bake for 30-35 minutes, until the center springs back lightly and a toothpick comes out with a few moist crumbs.
  7. Cool completely in the pan on a wire rack.
Make the cream cheese frosting
  1. In a large bowl, beat the cream cheese and unsalted butter with an electric mixer until smooth.
  2. Beat in the powdered sugar, one cup at a time, until the frosting is smooth and spreadable.
Assemble the cake
  1. Spread the frosting evenly over the cooled cake.
Add the toffee crunch
  1. Just before serving, scatter the chopped pecans, toffee bits, and red and green holiday sprinkles evenly over the frosting.

Notes

Add the toffee crunch topping just before serving to help it stay crisp. Refrigerate leftovers for up to 4 days; freeze the frosted cake without the topping, then add the topping before serving. For a nut-free variation, omit the pecans.
