Ingredients

For the sweet potato filling
  • 3 lb sweet potatoes peeled and cut into 1-inch chunks
  • 10 cup water
  • 8 tbsp unsalted butter divided (4 tablespoons melted for the filling and 4 tablespoons cold, cubed for the streusel)
  • 0.33 cup whole milk
  • 0.25 cup light brown sugar packed
  • 1 tsp vanilla extract
  • 0.75 tsp kosher salt
  • 2 eggs large, lightly beaten
For the maple swirl
  • 0.33 cup pure maple syrup
For the cinnamon streusel
  • 0.75 cup all-purpose flour
  • 0.33 cup granulated sugar
  • 1 tsp ground cinnamon

Equipment

  • 1 9x13-inch baking dish

Method

Cook the sweet potatoes
  1. Heat the oven to 350°F.
  2. Grease a 9x13-inch baking dish.
  3. Put the sweet potatoes in an 8-quart pot and add the water. Bring to a boil over high heat, then simmer for 15–20 minutes, until the potatoes are fork-tender.
  4. Drain the potatoes well and return them to the pot.
  5. Melt 4 tablespoons of the divided butter in a microwave-safe bowl.
  6. Mash the melted butter into the potatoes with the milk, brown sugar, vanilla, and salt.
  7. Let the mixture cool for 5 minutes.
  8. Stir in the eggs until well combined.
  9. Spread the mixture in the prepared baking dish.
Make the streusel
  1. In a medium bowl, stir together the flour, granulated sugar, and cinnamon.
  2. Cut in the remaining 4 tablespoons cold butter until the mixture forms coarse crumbs.
Assemble and bake
  1. Drizzle the maple syrup over the sweet potato mixture and gently swirl it through the top with a knife.
  2. Scatter the streusel evenly over the surface.
  3. Bake for 30–40 minutes, until the streusel is golden and the center reaches 160°F. Loosely cover with foil if the topping browns before the center is hot enough.
  4. Rest the casserole for 10 minutes before serving.

Notes

For a smooth filling, mash the potatoes thoroughly before adding the eggs. Refrigerate leftovers for up to 4 days; freeze for up to 2 months. For a dairy-free variation, use plant-based butter and unsweetened plant milk.
