Ingredients

  • 1 block (8 oz) cream cheese softened
  • 1 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 4 cups frozen corn thawed and patted dry
  • 2 cups cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 2 green onions thinly sliced
  • 1 jalapeño seeded and finely chopped

Equipment

  • 1 8x8-inch baking dish

Method

  1. Heat the oven to 375°F and grease an 8x8-inch baking dish.
  2. Stir the cream cheese, sour cream, and ranch seasoning mix in a large bowl until smooth, then fold in the thawed and patted-dry corn, shredded cheddar cheese, cooked and crumbled bacon, thinly sliced green onions, and seeded and finely chopped jalapeño.
  3. Spread the mixture in the prepared dish.
  4. Bake for 25 to 30 minutes, until hot and bubbling around the edges.
  5. Let the dip rest for 5 minutes before serving.

Notes

For the best texture, thaw and pat the corn dry before mixing it in. Refrigerate leftovers for up to 3 days; freezing is not recommended because the dairy can separate. Turkey bacon can be used in place of bacon if desired.
