Ingredients

  • 2 tbsp unsalted butter
  • 0.5 cup yellow onion finely chopped
  • 0.5 cup celery finely chopped
  • 0.75 cup low-sodium chicken broth
  • 2 cup dry herb-seasoned stuffing cubes
  • 0.5 cup dried cranberries
  • 0.5 tsp poultry seasoning
  • 1 egg large
  • 1 lb ground turkey
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 medium skillet
  • 1 rimmed baking sheet

Method

  1. Heat the butter in a medium skillet over medium heat, then add the onion and celery and cook for 5 to 7 minutes, stirring occasionally, until softened.
  2. Add the chicken broth and bring it to a simmer, then stir in the stuffing cubes, dried cranberries, and poultry seasoning. Cover, remove from the heat, and let stand for 5 minutes before cooling for 10 minutes.
  3. Heat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  4. Beat the egg in a large bowl, then add the ground turkey, cooled stuffing mixture, salt, and pepper and mix gently until just combined.
  5. Form the mixture into 12 balls, about 2 inches each, and arrange them on the prepared baking sheet.
  6. Bake for 20 to 25 minutes, until browned and the centers reach 165°F on an instant-read thermometer.
  7. Let the stuffing balls rest on the baking sheet for 5 minutes before serving.

Notes

For tender balls, mix the turkey mixture gently until just combined. Refrigerate leftovers for 3 to 4 days or freeze them; use gluten-free stuffing cubes for a gluten-free option.
