Method
Brown the sausage
- Heat a large pot over medium-high heat and brown the Italian sausage slices. Remove and set aside once browned.
Sauté aromatics
- In the sausage fat, sauté the onion for 4 minutes until softened. Add the garlic and Italian seasoning and cook for 1 minute.
Simmer cauliflower
- Pour in the chicken broth and add the cauliflower florets. Simmer for 15-18 minutes until very tender.
Blend for creaminess
- Blend about half the soup until smooth. Stir the blended portion back into the pot, then add the heavy cream.
Wilt kale and finish
- Add the kale, sausage, red pepper flakes, and Parmesan. Cook for 5 minutes until the kale wilts.
Season and serve
- Season the soup with salt and pepper to taste. Serve hot.
Notes
For the smoothest texture, blend carefully in batches and stop when the mixture is silky rather than fully puréed—half keeps the soup hearty. Refrigerate in an airtight container up to 4 days; reheat gently on the stove. Freezing is not ideal because the cream may separate when thawed. If you want a lighter option, swap the heavy cream for half-and-half and simmer 2-3 minutes longer to thicken slightly.
