Brown the beef and load the slow cooker
- Brown the ground beef and drain it well, then transfer the browned meat to a slow cooker. Aim for even browning so the soup has a rich, beefy base.
- Add the russet potatoes, onion, garlic, and beef broth to the slow cooker. Stir to distribute the potatoes, then add the cheddar cheese soup, Worcestershire sauce, garlic powder, and mustard powder.
Slow-cook until tender
- Cook on Low for 6-8 hours (or on High for 3-4 hours) until the potatoes are very tender. You should be able to mash a chunk easily with a spoon against the side of the pot.
- Mash some of the potatoes directly in the pot to thicken the soup. Focus on breaking up a portion so the rest stays in chunks for a cheeseburger-style texture.
Melt the cheeses and finish
- Stir in the cubed cream cheese until melted. Keep stirring until no cream cheese streaks remain.
- Add the shredded cheddar and stir until smooth. The soup should look glossy and thick enough to coat a spoon.
Serve like a deconstructed cheeseburger
- Ladle the soup into bowls and top with diced pickles. Add them last so they stay bright and crunchy.
- Drizzle ketchup and mustard over the top just before serving. Use a light zigzag so each bite gets both tang and burger-style flavor.
Notes
For extra thick soup, mash more potatoes in Step 4 and keep the lid on for the final cheese-melting time so everything stays hot. Refrigerate leftovers in an airtight container for up to 4 days; reheat gently on the stove or in the microwave, stirring to restore creaminess. Freezing is not recommended because the cheddar and cream cheese can change texture after thawing. Dietary swap: use reduced-fat cream cheese and reduced-fat shredded cheddar to lower calories while keeping the same creamy melt.
