Ingredients

For the snowballs
  • 1 tub (1.5 qt) lime sherbet slightly softened
For the punch
  • 4 cups pineapple juice chilled
  • 4 cups cranberry juice cocktail chilled
  • 1 bottle (2 L) ginger ale chilled

Equipment

  • 1 rimmed baking sheet
  • 1 6-quart punch bowl

Method

Freeze the snowballs
  1. Line a rimmed baking sheet with parchment paper.
  2. Scoop the slightly softened sherbet into 12 balls, about 1/2 cup each.
  3. Freeze the sherbet balls until firm, at least 1 hour.
Mix the punch
  1. In a 6-quart punch bowl, stir together the pineapple juice and cranberry juice cocktail.
  2. Slowly pour in the ginger ale and stir gently to combine.
  3. Add the frozen sherbet balls and serve immediately.

Notes

For the neatest snowballs, freeze them on the parchment-lined baking sheet until firm before mixing the punch. Refrigerate leftover punch without the sherbet for up to 3 days; freezing the assembled punch is not recommended. For a lower-sugar option, use diet ginger ale.
