Ingredients

For the bundles
  • 1.5 lb green beans fresh, trimmed
  • 8 bacon slices, regular-cut, cut in half crosswise
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper
For the glaze
  • 4 tbsp butter unsalted
  • 0.25 cup brown sugar packed, light, brown
  • 0.5 tsp garlic powder

Equipment

  • 1 rimmed 18x13-inch baking sheet

Method

Assemble the bundles
  1. Preheat the oven to 400°F.
  2. Line a rimmed 18x13-inch baking sheet with foil.
  3. Divide the green beans into 16 bundles of about 5 to 6 beans each.
  4. Wrap each bundle with a bacon half.
  5. Place the bundles seam-side down on the baking sheet.
  6. Sprinkle the bundles with the kosher salt and black pepper.
Make the glaze
  1. Melt the butter in a small saucepan over medium-low heat.
  2. Stir in the brown sugar and garlic powder until combined.
  3. Brush the glaze over the bundles.
Bake the bundles
  1. Bake for 30 to 35 minutes, until the beans are tender and the bacon is browned and crisp.
  2. Let the bundles rest on the baking sheet for 5 minutes before serving.

Notes

For even cooking, make the bundles similar in size. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the beans can lose their texture. For a dairy-free option, substitute plant-based butter.
