Ingredients

For the soup
  • 1 tbsp olive oil
  • 1 lb ground beef 85% lean
  • 1 yellow onion medium, diced
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes
  • 1 jar (24 oz) spaghetti sauce
  • 5 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 8 oz lasagna noodles broken into bite-size pieces
For the cheese topping
  • 1 cup ricotta cheese whole-milk
  • 1 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Equipment

  • 1 6-quart Dutch oven

Method

Make the soup
  1. Heat the olive oil in a 6-quart Dutch oven over medium-high heat.
  2. Add the ground beef and onion and cook for 7 to 9 minutes, breaking up the beef, until the beef reaches 160°F and the onion is softened; drain excess fat.
  3. Stir in the garlic, oregano, and red pepper flakes and cook for 30 seconds.
  4. Stir in the spaghetti sauce, chicken broth, diced tomatoes, salt, and black pepper.
  5. Bring to a boil over medium-high heat.
  6. Stir in the broken lasagna noodles and reduce the heat to maintain a simmer.
  7. Cook uncovered for 10 to 12 minutes, stirring often, until the noodles are tender.
Make the cheese topping
  1. While the soup simmers, stir together the ricotta, mozzarella, Parmesan, and parsley in a medium bowl.
Serve the soup
  1. Ladle the soup into bowls and top each serving with a spoonful of the cheese mixture.

Notes

For tender noodles, serve soon after cooking because they continue absorbing broth. Refrigerate leftovers for up to 3 days; freezing is possible, though the noodles may soften, so freeze without them when practical. Ground turkey can replace the beef for a leaner option.
