  • 12 oz semisweet chocolate chips
  • 0.5 cup unsalted butter cut into pieces
  • 3 tbsp light corn syrup
  • 6 oz graham crackers broken into 1-inch pieces
  • 4 oz mini marshmallows
  • 1 bag (5.5 oz) Maltesers

Equipment

  • 1 8-inch square pan
  • 1 microwave

Method

  1. Line an 8-inch square pan with parchment paper, leaving an overhang on two sides.
  2. Combine the chocolate chips, butter, and corn syrup in a microwave-safe bowl.
  3. Microwave at 50% power in 30-second intervals, stirring each time, until smooth.
  4. Let the chocolate mixture cool for 5 minutes.
  5. Put the graham crackers, mini marshmallows, and Maltesers in a large bowl, pour in the chocolate mixture, and fold gently until everything is coated.
  6. Transfer the mixture to the prepared pan and press it into an even layer.
  7. Refrigerate for at least 2 hours, until firm.
  8. Let the rocky road stand at room temperature for 10 minutes.
  9. Lift it from the pan using the parchment and cut into 16 squares.

Notes

Press the mixture gently into an even layer so the pieces stay intact. Store covered in the refrigerator for up to 1 week; freezer storage is suitable. For a gluten-free option, use gluten-free graham crackers.
