Mini Sandwich Skewers

Mini sandwich skewers layer toasted bread with deli turkey, cheddar, lettuce and grape tomatoes for an easy handheld appetizer. A light mayonnaise-Dijon spread brings the small sandwiches together before they’re chilled and served on bamboo skewers.

Ingredients

  • 6 sandwich bread slices
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 6 oz deli turkey thinly sliced
  • 4 oz cheddar cheese cut into 12 small squares
  • 2 green leaf lettuce leaves, torn into 12 small pieces
  • 12 grape tomatoes
  • 12 bamboo appetizer skewers 4-inch

Method

  1. Heat the oven to 350°F.
  2. Arrange the bread slices on a baking sheet and toast for 6–8 minutes, until lightly golden and dry.
  3. Cool the bread completely, then cut each slice into 4 squares.
  4. Stir the mayonnaise and Dijon mustard together, then spread a thin layer on one side of each bread square.
  5. Place 12 bread squares mayo-side up on a work surface.
  6. Top each with folded turkey, a cheddar square, a piece of lettuce and a grape tomato, then cap with the remaining bread squares mayo-side down.
  7. Secure each stack with an appetizer skewer.
  8. Arrange the skewers on a platter, cover and refrigerate until serving.
  9. Discard any that have been at room temperature for more than 2 hours.

Notes

For neat stacks, cut the bread into even squares after it has cooled completely. Refrigerate covered for up to 2 days; freezing is not recommended. Use gluten-free sandwich bread for a gluten-free option, and discard any skewers that have been at room temperature for more than 2 hours.
