Ingredients

For the miso butter
  • 4 tbsp unsalted butter softened
  • 2 tbsp white miso
  • 1 tbsp honey
  • 1 tsp lemon juice
For the salmon
  • 4 salmon 6-ounce, skin-on fillets
  • 0.25 tsp black pepper

Equipment

  • 1 rimmed baking sheet

Method

Make the miso butter
  1. In a small bowl, stir together the softened butter, white miso, honey, and lemon juice until smooth.
Bake the salmon
  1. Heat the oven to 400°F.
  2. Line a rimmed baking sheet with parchment paper or foil.
  3. Pat the salmon dry.
  4. Place the salmon skin-side down on the sheet.
  5. Season the salmon with black pepper.
  6. Spread the miso butter evenly over the fillets.
  7. Bake for 12 to 15 minutes, until the salmon flakes easily and registers 145°F in the thickest part.
  8. Rest for 2 minutes before serving.

Notes

Pat the salmon very dry so the miso butter coats it evenly. Refrigerate leftovers for up to 3 days; freezing is possible, though the salmon may lose some texture. For a dairy-free option, use a dairy-free butter alternative.
