  • 0.5 cup creamy peanut butter
  • 3 cups crispy rice cereal
  • 1 cup mini marshmallows
  • 0.5 cup mini chocolate chips
  • 1 parchment paper for lining the baking sheet

Equipment

  • 1 baking sheet
  • 1 microwave

Method

  1. Line a baking sheet with parchment paper.
  2. Combine the white chocolate chips and peanut butter in a large microwave-safe bowl.
  3. Microwave in 30-second bursts, stirring between each, until smooth.
  4. Let the mixture cool for 5 minutes.
  5. Gently fold in the crispy rice cereal, mini marshmallows, and mini chocolate chips until evenly combined.
  6. Drop heaping 2-tablespoon portions onto the prepared baking sheet.
  7. Refrigerate for 30 minutes, or until firm.

Notes

Gently fold the cereal in to help keep it crisp. Store in an airtight container in the refrigerator for up to 5 days; these cookies can be frozen. For a dairy-free swap, use dairy-free white and mini chocolate chips, and check that the marshmallows are dairy-free.
