Ingredients

  • 1.5 lb carrots peeled and cut into 1/2-inch-thick pieces
  • 1.5 tbsp olive oil
  • 1 tbsp ranch seasoning mix

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Toss the carrots with the olive oil and ranch seasoning mix in a large bowl.
  3. Spread the carrots in a single layer on a large rimmed baking sheet.
  4. Roast for 25 to 30 minutes, turning halfway through, until tender and browned at the edges.

Notes

For even browning, spread the carrots in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is not recommended because the carrots can soften. For a dairy-free option, use dairy-free ranch seasoning mix.
