Ingredients

For the cookies
  • 48 Ritz crackers
  • 1 cup creamy peanut butter
For the coating
  • 16 oz vanilla almond bark chopped
For decorating
  • 0.25 cup holiday sprinkles red and green

Equipment

  • 1 rimmed baking sheet
  • 1 microwave

Method

Assemble the cookies
  1. Line a rimmed baking sheet with parchment paper.
  2. Spread 2 teaspoons peanut butter on each of 24 crackers, then top with the remaining crackers and press gently to the edges.
Melt the coating
  1. Put the chopped almond bark in a microwave-safe bowl and microwave at 50% power in 30-second bursts, stirring after each, for 2 to 3 minutes total, until completely smooth.
Dip and decorate
  1. Dip each sandwich cookie in the melted coating, lift it out with a fork, and tap off the excess.
  2. Place each dipped cookie on the prepared baking sheet.
  3. Sprinkle with the holiday sprinkles before the coating sets.
  4. Refrigerate for 15 to 20 minutes, until the coating is firm.

Notes

For neat dipping, let excess coating drip off before placing each cookie on the baking sheet. Store in an airtight container in the refrigerator for up to 1 week; freezer storage is suitable. For a peanut-free variation, use sunflower seed butter.
