Ingredients

  • 2 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 0.5 tsp fine sea salt
  • 2 tbsp honey

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a rimmed 18x13-inch baking sheet with parchment paper.
  3. Toss the sweet potatoes with the olive oil and sea salt in a large bowl.
  4. Spread the potatoes in a single layer on the baking sheet.
  5. Roast for 20 minutes.
  6. Stir the potatoes.
  7. Drizzle with the honey and toss to coat.
  8. Roast for 10 to 15 minutes more, until the potatoes are tender and browned at the edges.

Notes

For the most even browning, spread the potatoes in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is possible, though the potatoes may soften when thawed. For a vegan option, swap the honey for maple syrup.
