Ingredients

For the sweet potatoes
  • 2 lb sweet potatoes cut into 1-inch cubes
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For the sloppy Joe filling
  • 1 lb ground beef 85% lean
  • 1 yellow onion small, finely chopped
  • 1 green bell pepper small, finely chopped
  • 2 cloves garlic minced
  • 0.75 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tbsp brown sugar packed
  • 1 tsp apple cider vinegar
  • 0.25 cup water

Equipment

  • 1 large rimmed baking sheet
  • 1 12-inch skillet

Method

Roast the sweet potatoes
  1. Heat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
  2. Toss the sweet potatoes with the olive oil, kosher salt, and black pepper.
  3. Spread the sweet potatoes in a single layer on the baking sheet.
  4. Roast for 25–30 minutes, turning once halfway through, until tender and browned at the edges.
Cook the sloppy Joe filling
  1. Cook the ground beef in a 12-inch skillet over medium-high heat for 6–8 minutes, breaking it into small crumbles, until browned and it reaches 160°F.
  2. Drain excess fat from the ground beef.
  3. Add the yellow onion and green bell pepper and cook for 4–5 minutes, stirring, until softened.
  4. Add the garlic and cook for 30 seconds.
  5. Stir in the ketchup, tomato paste, Worcestershire sauce, yellow mustard, packed brown sugar, apple cider vinegar, and water.
  6. Simmer for 5–7 minutes, stirring occasionally, until thickened.
Assemble the bowls
  1. Divide the roasted sweet potatoes among 4 bowls.
  2. Spoon the sloppy Joe filling over the sweet potatoes.

Notes

For evenly browned sweet potatoes, spread them in a single layer on the baking sheet. Refrigerate leftovers for 3–4 days or freeze for up to 3 months. Ground turkey can replace the ground beef for a leaner variation.
