Load the slow cooker
- Place ham steak (or leftover ham), baby potatoes, fresh green beans, and diced yellow onion into the crockpot.
- Pour in chicken broth, then add unsalted butter, garlic powder, and black pepper.
Slow-cook until tender
- Cover and cook on LOW for 6–7 hours until the potatoes are fork-tender.
- Cover and cook on HIGH for 3–4 hours until the potatoes are fork-tender.
Finish and serve
- Stir gently before serving to redistribute the broth.
- Ladle into bowls and make sure each serving gets a mix of ham, potatoes, and green beans.
Store leftovers
- Store leftovers covered in the fridge for up to 4 days.
Notes
Pro tip: use similarly sized potato halves so they finish fork-tender at the same time. Refrigerate leftovers covered for up to 4 days; freeze is not recommended because green beans may soften further after thawing. For a lighter option, use low-sodium chicken broth and reduce the butter to 1 tbsp while still cooking on LOW or HIGH.
