baby potatoes
  • 1.5 lb baby potatoes
fresh green beans
  • 1 lb fresh green beans
yellow onion
  • 1 yellow onion
chicken broth
  • 3 cup chicken broth
unsalted butter
  • 2 tbsp unsalted butter
garlic powder
  • 1 tsp garlic powder
black pepper
  • 0.5 tsp black pepper

Method
 

Load the slow cooker
  1. Place ham steak (or leftover ham), baby potatoes, fresh green beans, and diced yellow onion into the crockpot.
  2. Pour in chicken broth, then add unsalted butter, garlic powder, and black pepper.
Slow-cook until tender
  1. Cover and cook on LOW for 6–7 hours until the potatoes are fork-tender.
  2. Cover and cook on HIGH for 3–4 hours until the potatoes are fork-tender.
Finish and serve
  1. Stir gently before serving to redistribute the broth.
  2. Ladle into bowls and make sure each serving gets a mix of ham, potatoes, and green beans.
Store leftovers
  1. Store leftovers covered in the fridge for up to 4 days.

Notes

Pro tip: use similarly sized potato halves so they finish fork-tender at the same time. Refrigerate leftovers covered for up to 4 days; freeze is not recommended because green beans may soften further after thawing. For a lighter option, use low-sodium chicken broth and reduce the butter to 1 tbsp while still cooking on LOW or HIGH.
