Ingredients

  • 2 lb baby carrots
  • 0.33 cup pure maple syrup
  • 0.25 cup brown sugar packed light
  • 4 tbsp unsalted butter cut into small pieces
  • 0.5 tsp kosher salt
  • 1 tbsp cornstarch
  • 1 tbsp cold water

Equipment

  • 1 6-quart slow cooker

Method

  1. Add the carrots, maple syrup, brown sugar, butter, and salt to a 6-quart slow cooker and stir to coat.
  2. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the carrots are fork-tender.
  3. Whisk the cornstarch and cold water in a small bowl until smooth.
  4. Stir the cornstarch mixture into the carrots and cooking liquid.
  5. Cook uncovered on HIGH for 15 to 20 minutes, stirring once, until the glaze thickens and coats the carrots.

Notes

For the smoothest glaze, whisk the cornstarch and cold water until completely smooth before stirring it in. Refrigerate leftovers for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free version, use plant-based butter.
