Ingredients

For the whipped cream
  • 1 cup heavy cream cold
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract
For the Santas
  • 12 strawberries large, about 1 pound, washed and thoroughly dried
  • 24 chocolate chips mini

Equipment

  • 1 electric mixer

Method

Whip the cream
  1. In a chilled medium bowl, beat the heavy cream, powdered sugar, and vanilla with an electric mixer on medium-high speed for 2 to 3 minutes, until stiff peaks form.
Assemble the Santas
  1. Use a small sharp knife to cut off each strawberry’s leafy stem end to make a flat base.
  2. Cut off the pointed top third of each berry to make a cap.
  3. Stand the strawberry bases cut-side down and pipe or spoon whipped cream onto each one.
  4. Place a strawberry cap on top of the cream.
  5. Press 2 mini chocolate chips into the cream on each Santa for eyes.
  6. Serve promptly.

Notes

For neat caps, make the strawberry cuts level and dry the berries thoroughly before assembling. Refrigerate leftovers in an airtight container and enjoy within 1 day; freezing is not recommended. For a dairy-free option, use chilled dairy-free whipping cream and powdered sugar.
