Ingredients

For the mushrooms
  • 1.5 lb cremini mushrooms about 24 medium, wiped clean, stems removed and reserved
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.13 tsp black pepper
For the filling
  • 1 tbsp unsalted butter
  • 2 cloves garlic minced
  • 0.5 cup panko breadcrumbs
  • 4 oz cream cheese softened
  • 0.33 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Equipment

  • 1 rimmed baking sheet
  • 1 medium skillet

Method

Prepare the mushrooms
  1. Preheat the oven to 400°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Finely chop the reserved mushroom stems.
  4. Arrange the mushroom caps cavity-side up on the prepared baking sheet.
  5. Drizzle the caps with olive oil.
  6. Season the caps with kosher salt and black pepper.
Make the filling
  1. Melt the butter in a medium skillet over medium heat.
  2. Add the chopped mushroom stems and cook for 4 to 5 minutes, until tender and their moisture has evaporated.
  3. Add the garlic and cook for 30 seconds, until fragrant.
  4. Remove the skillet from the heat.
  5. Stir in the panko, cream cheese, Parmesan, and parsley until evenly combined.
Stuff and bake
  1. Divide the filling among the mushroom caps, mounding it slightly.
  2. Bake for 18 to 22 minutes, until the caps are tender and the tops are golden brown.
  3. Let the mushrooms rest for 5 minutes before serving.

Notes

For the best texture, mound the filling slightly and bake until the tops are golden brown. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended. For a gluten-free version, use gluten-free panko breadcrumbs.
