Texas Roadhouse green beans simmer with crisp bacon, onion, garlic, and chicken broth for tender beans with a savory, lightly sweet flavor. This easy stovetop side dish finishes uncovered so most of the broth reduces.

Ingredients

  • 4 slices bacon cut into 1/2-inch pieces
  • 0.5 cup yellow onion finely diced
  • 2 cloves garlic minced
  • 2 can (14.5 oz) cut green beans drained
  • 0.75 cup chicken broth
  • 1 teaspoon granulated sugar
  • 0.25 teaspoon ground black pepper

Equipment

  • 1 4-quart saucepan

Method

  1. In a 4-quart saucepan over medium heat, cook the bacon for 6 to 8 minutes, stirring occasionally, until crisp.
  2. Transfer the bacon to a plate with a slotted spoon, leaving about 1 tablespoon of drippings in the pan.
  3. Add the onion to the saucepan and cook over medium heat for 4 to 5 minutes, stirring occasionally, until softened.
  4. Add the garlic and cook for 30 seconds.
  5. Stir in the green beans, chicken broth, sugar, black pepper, and cooked bacon.
  6. Bring the mixture to a simmer over medium heat.
  7. Cover, reduce the heat to low, and simmer for 15 minutes.
  8. Uncover and simmer for 5 to 10 minutes, until the beans are tender and most of the broth has reduced.

Notes

For the best texture, leave about 1 tablespoon of bacon drippings in the pan and simmer uncovered until most of the broth has reduced. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the beans can become soft. Use low-sodium chicken broth for a lower-sodium option.
