  • 2 cup ice
For the filling and garnish
  • 0.25 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tbsp sweet pickle relish
  • 0.25 tsp rubbed sage
  • 0.125 tsp kosher salt
  • 0.125 tsp black pepper
  • 2 tbsp whole-berry cranberry sauce
  • 0.125 tsp paprika

Method

Cook and cool the eggs
  1. Arrange the eggs in a single layer in a 3-quart saucepan.
  2. Add 8 cups cold water, or enough to cover them by 1 inch.
  3. Bring the water to a boil over high heat.
  4. Cover the pan and remove it from the heat.
  5. Let the eggs stand for 12 minutes.
  6. Transfer them to a large bowl with the remaining 4 cups cold water and 2 cups ice.
  7. Let the eggs cool in the ice bath for 10 minutes.
  8. Peel the eggs and halve them lengthwise.
  9. Place the yolks in a medium bowl.
  10. Arrange the whites on a serving plate.
Make the filling and assemble
  1. Mash the yolks until smooth.
  2. Mix in the mayonnaise, Dijon mustard, apple cider vinegar, sweet pickle relish, rubbed sage, kosher salt, and black pepper.
  3. Spoon the filling into the egg-white halves.
  4. Top each with a small dab of whole-berry cranberry sauce.
  5. Sprinkle with paprika.
  6. Cover and refrigerate for at least 20 minutes before serving.
  7. Keep the eggs chilled until ready to serve.

Notes

For a smooth filling, mash the yolks thoroughly before mixing in the other ingredients. Store covered in the refrigerator for up to 2 days; do not freeze. For a dairy-free option, use dairy-free mayonnaise.
