Ingredients

  • 3 lb beef chuck cut into 1.5-inch cubes
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp avocado oil or olive oil
  • 1 yellow onion medium, chopped
  • 2 celery ribs, chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 5 cups beef broth Whole30-compliant
  • 3 carrots cut into 1-inch pieces
  • 1.5 lb Yukon Gold potatoes cut into 1.5-inch pieces

Equipment

  • 1 6-quart Dutch oven

Method

  1. Pat the beef dry and season it with the salt and pepper.
  2. Heat the oil in a 6-quart Dutch oven over medium-high heat.
  3. Brown the beef in batches for 2 to 3 minutes per side, then transfer each batch to a plate.
  4. Add the onion and celery to the pot and cook over medium heat for 5 minutes, stirring occasionally.
  5. Stir in the garlic and tomato paste and cook for 1 minute.
  6. Stir in the thyme, bay leaves, and broth, scraping up the browned bits from the bottom of the pot.
  7. Return the beef and any accumulated juices to the pot.
  8. Bring the broth to a boil.
  9. Cover, reduce the heat to low, and simmer gently for 1 1/2 hours.
  10. Stir in the carrots and potatoes.
  11. Cover and simmer for 45 to 60 minutes, until the beef is fork-tender and the vegetables are soft.
  12. Remove the bay leaves.
  13. Mash a few potato pieces against the side of the pot and stir them into the broth to thicken it.
  14. Let the stew rest for 10 minutes before serving.

Notes

For the best browning, pat the beef dry and brown it in batches. Refrigerate leftovers for up to 4 days or freeze for up to 3 months. Use Whole30-compliant beef broth to keep the stew Whole30-compliant.
