Ingredients
  

Mushrooms and porcini soaking liquid
  • 1 lb mixed wild mushrooms (shiitake, cremini, oyster) Sliced.
  • 1 oz dried porcini mushrooms Soaked in 2 cups hot water; reserve soaking liquid after draining.
Vegetables and aromatics
  • 3 onions Thinly sliced.
  • 4 cups kale Stems removed and chopped.
  • 6 garlic Minced.
  • 1 tbsp fresh thyme
Broth and seasonings
  • 6 cups beef or vegetable broth
  • 0.5 cup dry sherry or white wine
  • 1 tbsp balsamic vinegar
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 0.5 tsp salt To taste.
  • 0.5 tsp pepper To taste.
For serving
  • 0.25 cup Parmesan shavings For serving.
  • 1 tsp truffle oil For serving.

Method
 

Caramelize the onions
  1. Melt butter with olive oil in a large heavy pot over medium heat; add the thinly sliced onions and cook 35-40 minutes, stirring occasionally, until deeply golden and caramelized.
  2. When the onions are caramelized, add the minced garlic and sliced mixed wild mushrooms and cook 8 minutes until the mushrooms are browned.
  3. Pour in the dry sherry (or white wine) to deglaze and cook 2 minutes, scraping up the browned bits from the bottom of the pot.
Simmer and finish
  1. Drain the soaked dried porcini mushrooms (reserve the soaking liquid) and add the porcini along with the strained soaking liquid, broth, fresh thyme, and balsamic vinegar.
  2. Simmer for 15 minutes, then add the chopped kale and cook 5 minutes until wilted.
  3. Season with salt and pepper to taste, then ladle into bowls and top with Parmesan shavings and a drizzle of truffle oil.

Notes

Pro tip: slice onions evenly for more consistent caramelization, and don’t rush the 35-40 minutes—deep color is where the flavor builds. Store leftovers in the fridge up to 4 days; reheat gently on the stove. Freezing is okay for up to 3 months, though kale may soften further. Dietary swap: use vegetable broth and extra olive oil (instead of butter) if you want a fully vegetarian version.
